Only 4 more days to go Y’all! I hope you’re all as excited as I am.

I don’t sleep much but recently my short bursts of sleep are filled with visions of sweet bacon, smokey meats, and smiling people.

For team Baconfest, the action starts on Thursday, we’ll be prepping the meats and getting things ready to make sauces and salsas. Friday night is when things really kick into high gear though, the smokers get fired up and we start putting everything together. It’s during this last night when we discover the holes in my planning and put together the emergency shopping list for Saturday morning.

As for the menu, we made the hard decision to not serve pork belly tacos. The logistics are just too hard when you take into consideration a small yard, kids, drinking adults, boiling manteca, and time. But don’t worry, we’re going to replace them with something just as delicious… pork belly burnt ends.

We’re expecting about 50 people and the weather will be nice. The weather report shows a high of 86 degrees but it’s been cooling pretty quickly. In addition to the activity wig and the “damn good time” I asked you all to bring, you might also want to bring a light sweater in case the breeze comes in.

Some reminders:

– We’ll be ready for you all at about 1:00 PM with appetizers starting to come off the grill at about 1:30 PM. The main dishes will likely be served at about 2:30. Remember though, BBQ is ready when it’s ready so it could be a little earlier or later.

– You likely already know how to get to my house or have the address. If you don’t, make sure you speak with your Baconfest “sponsor”. You’ll know you’re here when you see my truck, Santiago, in the driveway. ChatGPT named him, he’s big, blue, and identifies as Mexican. Santiago enjoys pulling heavy things, riding on bumpy trails while in 4 low, and being parked on the side of the lake while I fish. He’s pretty friendly and likes to be looked at but doesn’t like to be touched.

– If you can, bring a chair or two. Not everyone needs to bring one, it’s not a BYOC event, but if you have one handy bring it along just in case.

– I have some beer, hard lemonade, canned margaritas, soda, and water. I tried to keep myself from buying too much though, there’s always a lot left over. Feel free to bring some drinks to share but please take any that are left when you leave. I think I’m still drinking beer from Baconfest 2020.

– I always tell myself I’m going to take pics and then forget to. If you take any good ones while you’re here please send them to me somehow…if necessary get them to me through your Baconfest sponsor. Good pics might make it onto my Baconfest 2023 wrap-up post.
